Notes

The riper your banana, the more sweet the cookies will be. Try to get one that's very brown and spotty.
If using protein powder, use the best quality one you can find. We tested with several types and using a good quality one makes a huge difference. Go for one with as few ingredients as possible and no added sweeteners or flavourings. If using ground almonds, the texture and appearance will be a little different - they are less shiny and a little more soft.
