We love this recipe. I am flexible with the veggies - often adding mushrooms at the start and / or grated courgette when I add the lentils. I usually also use dry black lentils, and cook it for 20 mins after adding them.

Huge hit with all the family! Will become a family staple and healthy swap for beef ragรบ. I had to cook the sofrito for longer than stated (20mins) and also the lentils (45 mins).
