Satay Green Bean Stir Fry Rice

Ingredients
  • 1 tbsp Sesame oil
  • 50g  Ginger, sliced into matchsticks
  • 2 cloves Garlic, sliced
  • 1 tbsp Tamari
  • 1 bunch Spring onions (about 100g), sliced, some reserved for garnish
  • 1 head of Spring greens (about 350g), finely shredded
  • 1 bunch of Green beans (about 350g), trimmed and halved
  • 200g Wholegrain rice (precooked)
  • 1 tbsp Peanut butter
  • 30mls Hot water
  • 1 tbsp Tamari
  • ½ tsp Chilli flakes
  • 1 tsp Ground Black pepper
  • 1 tbsp Sesame oil
  • 1 tbsp Rice wine vinegar
Instructions

Add the ginger, garlic and spring onions to a large lidded pan medium heat and saute for 5 minutes

Add the spring greens and 1 tbsp tamari and cook for 2 minutes

Add the green beans and cover for 5 minutes until cooked

Meanwhile mix the satay ingredients together and set aside

Uncover the the pan, add the satay mixture and cooked rice

Stir until all the ingredients are mixed together and the beans are cooked

Serve with spring onion as a garnish
