Shop this recipe:
- Parboiled new potatoes, quartered (boil new potatoes for 8 minutes)
- 1 Tsp nigella seeds
- 1 Tsp fennel seeds
- 2 Tbsp extra virgin olive oil
- 1 Medium pak choy, finely sliced
- 25g Sundried tomatoes
- 3 Eggs, whisked
- 1 Tsp butter (optional)
Add the oil to a frying pan on medium heat, add potatoes, fennel and nigella seeds sauté for 2-3 minutes
Push the potatoes to one half of the pan and stir in the pak choy with sundried tomatoes, cover with a lid for 2 minutes
Uncover and push the ingredients to clear 1/4 of pan space, add the butter (or a dash more oil) and stir in the eggs
Whisk the eggs to scramble them (about 2 minutes) take off the heat and serve
