Fish Tacos

About this recipe

These make a fantastic meal to whip up really quickly in your kitchen. Bursting with flavour and lots of nutritional benefits from the fish full of essential fats and vibrant greens. Tons of your daily vitamins and minerals muddled up into the zesty salsa along with all those beautiful phytochemicals. The fish has great crunch to it being lightly fried in a good quality olive oil and pairs with the flavours perfectly.

Ingredients
  • Garfish fillets x3 (or use Seabream/Seabass ~300g)
  • 10 baby Tomatoes diced
  • 25g Alfalfa sprouts (or any bean sprouts you prefer)
  • 1 Avocado
  • 25g Kale finely chopped and massaged for 1-2 minutes
  • 1 Shallot finely diced
  • 1 Lime juice and zest
  • 10g Coriander finely chopped
  • ½ tsp Paprika
  • ½ tsp Chipotle pepper (or ground chilli)
  • 250ml Greek Yoghurt
  • Corn Tacos (or wraps of your choice)
  • 2 tbsp Extra Virgin Olive Oil
Instructions

DICE the tomatoes, massaged kale, avocado and shallot and add to a bowl with coriander and lime juice

ADD the chipotle to the yoghurt and set aside

SEASON the fish and smother in paprika and oil

LIGHTLY FRY the fish skin side down in a frying pan on medium heat for 2-3 mins skin side down. Flip and continue for another 60 seconds before removing from the heat

WARM your tacos in a dry pan on heat or under the grill

BUILD your tacos and enjoy with the yoghurt dip
