Pico de Gallo
This quick condiment made with just 6 ingredients (7 if you count salt!) brings fresh, bright flavour to any dish. Adding colour to a plate of food is an easy way to boost the nutrition. Tomatoes get their bright red colour from lycopene, an antioxidant shown to reduce the risk of heart disease. See our recipe for Mole Black Beans, Mushrooms and Pico de Gallo Rice Bowl to see how it can round out a main meal. It also makes a great addition to tacos, fajitas, or even with your morning eggs.

Notes
Tip: Use firm tomatoes to avoid a watery salsa. If you like, you can scrape out the seeds and reserve them for another use. If it turns out a little too juicy, serve with a slotted spoon.
Best eaten the day it is made but can be stored in the refrigerator for up to 2 days.
