Kraut on Toast with Nigella Seeds & Eggs

About this recipe

This is a rapid breakfast packed with both probiotic and prebiotic fibres. Supporting gut health requires both live microbes as well as the fibres to support them, so combining a good quality ‘live’ ingredient like kraut, kimchi or probiotic yoghurt with high fibre bread is a winning combination.

Getting used to having savoury and filling breakfasts is a great way of sustaining your satiety for longer periods. This type of breakfast certainly keeps me going on a long day.



You can leave the egg out and use hazelnuts or roasted cashews as a plant based option

Shop this recipe:

  • 2 Slices of thick whole grain bread (Original Pure Grain is my preferred option)
  • 1 tbsp Olive oil (or sesame oil)
  • 50g Fennel sauerkraut (or whatever you prefer)
  • 1 tsp Nigella seeds
  • 1 Egg, soft boiled, halved


Toast your bread

Top with a little oil and the kraut

Boil your egg by placing into a pan of cold water, bring to a simmer and cook  for a further 2 minutes before removing and peeling

Top your kraut with the egg and nigella seeds
