Method

1

Gather your ingredients. (brown instead of green lentils pictured)

2

Heat the coconut oil in a large pot over a medium heat. Add the garlic, ginger and spring onions with seasoning and cook for 2 minutes until starting to colour.

3

Add the curry powder, turmeric and cumin and cook for 30 seconds, until fragrant. (ground cumin pictured)

4

Add the tomatoes and cook gently for 7 minutes until they break down.

5

Add the chickpeas and lentils and stir to combine.

6

Stir the chickpeas through the spiced tomatoes in the pan.

7

Add the coconut milk and stir through the ingredients gently. Cover and simmer very gently for 10 minutes to allow the flavours to infuse.

8

Add the spinach in batches. Stir through the ingredients to gently wilt, then repeat until all the spinach is used up. When the last batch is used, cook for another 2 minutes then take off the heat. Stir through the lime, add salt and pepper to taste and top with fresh coriander to serve.

I use whatever greens I happened to have. Double the recipe so I can freeze the leftovers. When I make this for finicky people, I add a bit of brown sugar. I've also dumped veggies just starting to get too old. All kinds of cabbage-ish stuff, fresh peas, green beans.

I ADDED SOME CHICKEN BREAST (80G PER SERVING) AFTER THE GARLIC, GINGER AND SPRING ONIONS. I USED 1/2 LIME SQUEEZE PER SERVING AT THE END. I ALSO USED 1/2 SPINACH 1/2 KALE, WHICH AGAIN ENHANCED THE TASTE. NEXT TIME I'LL TRY ADDING CHICKEN THIGH (100G PER SERVING).

Pretty good recipe, nice and easy to make without too much chopping. We used curly kale instead of spinach (we generally prefer cavolo nero over spinach but there wasn't any left in the shop!) so didn't use quite as much, as it doesn't wilt down as much. Although tasty I felt it was lacking a bit of a kick so drizzled chilli oil over the top which definitely perked it up a bit. Would make it again as its good for batch cooking/meal prep.

Really tasty, lovely flavours

This dish is delicious. I will make it again.

I substituted thai green curry paste for the curry powder, and added a chopped green pepper to the onions. Delicious!

Beautiful - you have to make this, so easy and freezes well.

Delicious.

Absolutely delicious! I've loved all the recipes I've cooked from this app but this was my favourite so far. It was incredibly tasty with subtle curry flavours. Following another reviewer's advice, I added some prawns which went very well with the dahl but white fish or chicken would be equally as tasty. Love that it's freezer friendly too!

Aromatic and easy. Divine with shrimp.

Very delicious, the lime really lifts it. We had prawns with ours and they added a nice bit of sweetness. Adding this to the 'will make again' list.

Excellent with monkfish

So tasty! And really simple. I added prawns to mine at the end which I saw on the YouTube channel, worked great!

Meg 5 months ago

Delicious! I added sweet potato too. I froze this dish in five different containers and now I have quick and healthy lunch options. Love it!

Jacqueline 5 months ago

Absolutely scrumptious!
I did not have any chickpeas (and am not a great fan) so used kidney beans instead. The recipe seems quite forgiving.
The flavour combination was a real success and the freshness from the lime works particularly well.
Definitely a favourite

I didn’t have any cooked lentils and consulted with the AI and I ended up cooking the whole lot together in my instant pot with 75g dry lentils and 200ml water and cooked for 12 mins . Served with homemade chappatis, cucumber raita and it was delicious. Will definitely put this into favorites

This recipe is rounded, subtle flavours that are not lost in this fabulous dish. I used frozen spinach and put it in with the coconut milk. It worked a treat. Nothing else was changed. It goes into my favourite Healthy Eating folder to be cooked again.

Really nice but I could of eaten a bigger serving.

Family favourite already..great flavours and the lime juice at the end is a winner. Like most dishes with aromatic spices, it is easily as good if not better the next day.

An easy and tasty meal.

Very flavoursome dish, will definitely cook again. Used tinned tomatoes as I didn’t have fresh, and drained a bit of the juice so it wasn’t so watery. Used 100g creamed coconut in 300ml water instead of coconut milk. Only had frozen spinach which I’ll add at the same time as the coconut milk next time as it took a while to defrost.

Great recipe, full of flavour. It blends down really well for a smooth curry (perfect for our toddler).

It tastes great cold with a salad, but even better when reheated the next day, once flavours have had time to enhance!

It’s a bi-weekly easy meal.

Susan 8 months ago

Tasty, thought it had more depth of flavour when simmered for longer.

So delicious and warming. Perfect winter dinner.

Siobhan 9 months ago

Quick and delicious! I didn’t have spinach but used cavelo nero instead. I think it’s a great vehicle for getting your fibre but also swapping out various veggies in place of spinach, I think some grated broccoli would be a nice addition also.

Janice 9 months ago

I did almost double the spices,,, but that's just me,,,, a love a flavor punch!!!

Christina 9 months ago

Punchy flavour, but not too spicy, balanced with the lime and coconut Nice mix of textures-lentils, chickpeas and spinach
