Method

Your notes

Gather your ingredients.

To make the dressing, put the jalapeño, avocado, lemon juice and olive oil into a blender with a big pinch of salt and pepper and blitz until smooth. Loosen with water, then set aside. add more or less water depending on the size of your avocado

Put all the other ingredients into in a large serving bowl and toss well to combine.

Pour over the avocado dressing to serve and enjoy.

I used the avocado sauce on a different plant combination - cooked quinoa and edamame beans plus sautéed courgette and mushrooms (because that’s what i had in the fridge). It went very well. I like having a repertoire of sauces to jazz up my meals and I will use this one again. Very easy.
