Gochugaru, Tuna, Edamame, Cucumber & Soba Noodle Salad

This lunchtime salad uses our gochugaru dressing and makes it richer by adding a dollop of peanut butter. If you can’t source locally, Korean gochug...aru chilli flakes can be found online. They have a unique not too spicy, slightly sweet flavour. They are also very fine and disperse well throughout dressings and sauces. Don’t be tempted to use regular red chilli flakes; Aleppo chilli flakes are the most suitable alternative. Method

Your notes

Gather and prepare your ingredients.

Bring a pot of water to a rolling boil. Add the soba noodles and cook for 4-5 minutes, until tender. Drain, and immediately run under cold water to halt the cooking process. Keep an eye on the noodles as they cook as soba noodles boil over easily.

Place all ingredients for the dressing into a small bowl and whisk to combine.

Place the cooled noodles, cucumber, edamame, spring onions and tuna into a bowl. Drizzle over the dressing and toss to coat. Adjust seasoning to taste. Serve sprinkled with toasted peanuts.
