We really enjoyed this. I had a purple sweet potato which didn’t look so pretty and tasted less sweet than the red one. Red ones are a bit sweet for me, but I think they would taste good with the mix of flavours and textures in this recipe

Great for lunch, make the day before and just add lettuce and avocado in the morning
