Gather your ingredients and preheat the oven to 220°C or 200°C fan.
Place peaches in a baking dish cut side up and drizzle with honey. Scatter with the thyme and sumac and pop in the oven to bake for 20-25 minutes, until softened and juicy.
In the meantime, mix the yoghurt with elderflower cordial.
Serve baked peaches with elderflower yoghurt, toasted hazelnuts, a few more thyme leaves and a sprinkling of sumac.
