You need more chocolate than you will actually use, in order to be able to coat the dates. Leftovers can be used for baking or hot chocolate.

Method
Gather and prepare your ingredients. Line a baking tray with parchment paper.
Place the chocolate into a bowl over a pan of simmering water. Heat until melted, stirring often. Make sure the bowl doesn’t touch the water as this could lead to burnt chocolate.
Spoon some almond butter into the centre of each date. Close, sealing the butter inside.
Dip each date into the melted chocolate. Allow to hang over the bowl for a moment, allowing any excess to drip off, before placing onto your prepared tray. Use either a cocktail stick, small pair of tongs or a fork for this.
Sprinkle with pistachios and goji berries while the chocolate is still wet.
Allow to harden before serving. Timing will depend on room temperature.
