Potato, Lentil, Radish and Celery Salad

Not your average potato salad! We have bulked ours out with lots of crunchy summer vegetables and added lentils for extra fibre and protein. While there’s nothing wrong with classic potato salad and its creamy dressing, we think this lighter version with a zingy vinaigrette makes a delicious alternative.

Notes

We have chosen to cook lentils from dried, feel free to replace them with a tin or pouch of pre-cooked lentils to make things faster. They double in weight once cooked, so 80g of dried will yield 160g of cooked lentils.
