Doctor's Kitchen Giardiniera

This is our take on giardiniera - an Italian mixed pickle. Traditional giardiniera is made using bite-sized pieces of vegetables. We like the Chicago-...style alternative, where all the vegetables are finely chopped so the resulting pickle is like a relish. A spoonful added to sandwiches, wraps or salads adds a satisfying vinegary crunch. Don’t worry about following the exact gram weights of the vegetables given here.
