Doctor's Kitchen Giardiniera

This is our take on giardiniera - an Italian mixed pickle. Traditional giardiniera is made using bite-sized pieces of vegetables. We like the Chicago-style alternative, where all the vegetables are finely chopped so the resulting pickle is like a relish. A spoonful added to sandwiches, wraps or salads adds a satisfying vinegary crunch. Don’t worry about following the exact gram weights of the vegetables given here. Once you have enough pickling liquid to cover them, you can use any mix you like.
