An absolutely delicious meal. Added some home grown roasted beetroot. Will add some walnuts when I make this again. A definite favourite.

I added 200gms sliced mushrooms, 3tomatoes and half a capsicum. + 1tblsp chopped ginger. The mushrooms hid the Tempe flavour and I really loved the end product. Even my husband ate it and he hates tofu

I added cubed sweet potatoes to the bake and added twice the amount of tamari. First time trying tempeh and I loved it! I had cashew cream on hand that I made for another dish, so it was a fast meal prep. Delicious smoky flavor from the paprika. Will definitely make it again.

Smoked tofu works really well as sub for the tempeh. Really tasty, simple supper meal.

I actually used just plain firm tofu, but I gently mixed the spices, garlic tamari etc in a bowl before transferring to tray, to ensure the tofu was coated in flavour. Delicious! πŸ™
