Method
Gather and prepare your ingredients. Preheat the oven to 220°C/ 200°C fan.
Drizzle the pumpkin wedges with olive oil. Sprinkle with salt and pepper and toss to coat. Use your hands to ensure the pumpkin is evenly coated with oil and seasoning. Place into the oven and bake for 30 minutes until tender and turning dark in places.
Place the honey in a small bowl and put into the microwave for 5-10 seconds, just until drizzly. Add the sriracha sauce and stir to combine. (Alternatively, heat it up in a small saucepan on the hob. If your honey is already drizzly, you can skip this step). Bear in mind it will taste milder when paired with the sweet pumpkin.
Drizzle the pumpkin wedges with the hot honey. Sprinkle with the crumbled feta and pumpkin seeds before serving.
