Ingredients

Recipe 1: Butter Bean Mushroom & Kale Curry

  • 1 tbsp Coconut oil 
  • 1 Red onion, finely chopped
  • 250g Mushrooms, roughly sliced 
  • 2 Cloves garlic, finely chopped 
  • 2cm Piece ginger, grated 
  • 1 tbsp Curry powder
  • Pinch of Chilli flakes 
  • 1 tsp Paprika
  • 1 tsp Cumin seeds 
  • 1 tsp Ground coriander 
  • 400g Tomatoes, roughly chopped / 1 tin of chopped tomatoes 
  • 1 tin Coconut milk 
  • 1 tin Butter beans 
  • 150g Kale, shredded 
  • The juice of one lime 
  • Large handful of fresh coriander - roughly 15g 
  • Salt and pepper

Recipe 2: Spinach & Chickpea Saag

  • 1 tbsp Olive oil / or coconut oil 
  • 1 White onion 
  • 1 tsp Black mustard seeds 
  • 1 tsp Cumin seeds 
  • 3 Garlic cloves, thinly sliced
  • Thumb sized piece ginger, grated 
  • 2 tsp Ground coriander 
  • 1 tsp Ground turmeric 
  • ½ tsp Chilli flakes 
  • 8 Curry leaves 
  • 1 tin Chopped tomatoes 
  • 1 tin Chickpeas, drained 
  • 1 Vegetable stock cube + 400ml boiling water
  • 200g spinach leaves 
  • Salt and pepper 
  • Juice of ½ -1 lemon 
  • 15g fresh Coriander

Recipe 3: Sprout Stir Fry with Spelt Noodles and Mint Dressing

  • 150g Spelt noodles - boiled for 3 minutes (or alternative gluten free noodles)
  • 2 small Carrots/ 1 large - 150g, thinly sliced diagonally 
  • 100g Tenderstem/ normal broccoli, halved lengthways if thick 
  • 200g Sprouts, shredded 
  • 100g Chestnuts , roughly sliced
  • 1 tbsp Sesame oil 
  • Dash of water

Sprout Stir Fry with Spelt Noodles and Mint Dressing: Dressing Ingredients

  • 10g Fresh mint, finely chopped 
  • 1 tbsp Sesame oil 
  • 1 Clove garlic, grated 
  • 6cm Ginger, grated 
  • Juice and zest of one lime 
  • 1 tbsp Chinese vinegar / rice wine vinegar 

Recipe 4: Masala Aubergine Bake

  • 160g Aubergine, chopped into 2cm cubes
  • 1 tbsp Coconut oil
  • 2 tsp Garam masala
  • 1 tsp Mustard seeds
  • 1 tsp Fennel seeds
  • ½ tsp Ground cinnamon
  • 1 can Chopped tomatoes
  • 60g Almond butter (or any nut butter)
  • 50g Yoghurt (or plant based alternative)
  • 10g Coriander, roughly chopped
