Simple Miso Mushrooms on Toast

Great on its on or maybe with a perfectly poached egg or some scrambled tofu. Adding a condiment like miso paste adds an instant hit of flavour with minimal effort.

Miso paste is made from fermented soy beans and is traditionally used in Japanese cuisine – I love incorporating it into lots of my meals that I’m cooking in a hurry.

Research has also shown that fermented product such as miso can have beneficial impacts on gut health.

Shop this recipe:

  • 400g Mushrooms, sliced
  • 1 tbsp Olive oil / butter
  • 1 tbsp Miso paste
  • Handful of fresh parsley (around 25g)
  • Squeeze of Lemon juice
  • Black pepper
  • 2 Thick slices of bread, toasted to serve

Begin by pan frying your mushrooms in a frying pan with the olive oil or butter for around 5 minutes until soft. Add in the miso paste and black pepper. Cook for a further few minutes,
giving everything a good stir.

Pop your bread in the toaster or under the grill whilst your mushrooms carry on cooking.

Finish the mushrooms with a squeeze of lemon juice and some freshly chopped parsley and serve onto your toast.
