6 Tbsp olive oil
Juice and zest of one lemon
2 Tbsp white wine vinegar / apple cider vinegar
2 Handfuls of fresh basil
1 Clove of garlic
Plenty of salt and pepper
Simply blitz all the ingredients together in a food processor until smooth.
Taste for seasoning, adding in more salt and pepper or lemon juice if needed.
Store in a glass jar in the fridge for up to 1 month.
