Roast Potato, Red Onion and Chickpea Traybake

Ingredients (Serves 2)

  • 150 g roasted peppers (jarred)3cm cubed
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 300 g new potatoeshalved or quartered - around 1.5cm thick
  • 2 red onioncut into wedges
  • 4 garlic cloveskept whole in their skins
  • 2 baby tomatoeshalved (handfuls)
  • 1 chickpeas (can)drained and patted dry with kitchen towel
  • 1 corianderfinely sliced (parsley, tarragon or basil also work well)

Tray-bakes are the perfect fuss-free meal – it’s really just a case of chucking everything in a tray, giving it a good mix and popping it in the oven to let it do its magic. Baby new potatoes can have their skins left on and are quicker to cook than regular potatoes, meaning less effort and less cooking time. This dish can easily be adapted depending on what you have available – you could try switching up the protein source and using pieces of chicken or tofu, or adding in any veg you have going – I love using chunks of aubergine or courgette. This is great as a meal for two or as a side dish to meat, fish or maybe even veggie burgers or sausages. (serves 2 as a main/4 as a side)

Preheat the oven to 200C

Put the new potatoes, chickpeas, peppers onions and garlic into a large roasting tray with the oil, balsamic vinegar, along with plenty of salt and pepper. Give it all a good mix, making sure everything is coated in oil and vinegar.

Roast in the oven for 25-30 minutes until the potatoes are tender and everything has turned nicely golden.

Remove from the oven and finish by adding the fresh cherry tomatoes and herbs, again giving everything a good stir.
