Rhubarb and Pear Bircher

About this recipe
This is a beautifully balanced breakfast dish with contrasting sweet and sour flavours from the pear and rhubarb respectively. It delivers a wonderful flavour, plenty of fibre and phytonutrients and the chai blend adds a touch of warming spice.

Ingredients
- 1 tbsp Honey
- 100g Rhubarb (finely diced)
- 80g Rolled Oats (or gluten free alternative)
- 150g Grated pear
- 1 tsp Chai Spice (can also use cinnamon)
- 100g Probiotic Yoghurt (or non dairy yoghurt)
- 200g Milk (or non dairy fortified milk)
- 20g Pistachios, chopped
Instructions
Combine all the ingredients into a bowl overnight, apart from the pistachios
Drizzle with a little honey and garnish with pistachios before serving
