Red Onion and Pea Soup

A deliciously sweet dish using the principles of a french onion soup recipe but takes half the time.
The allicin family are known to be beautifully sweet when cooked (think of roasted garlic, leeks or even pan fried chives). The red onions will permeate this dish with their deep flavour and the peas make it creamy and deliciously satisfying.

Ingredients
- 250g Red Onion, sliced
- 100g Frozen peas
- 500ml Vegetable stock (one stock cube and 500ml boiling water)
- 3 sprigs Thyme
- 2 tbsp Olive oil
- Salt and pepper
Instructions
Put a large saucepan on medium heat, add the oil and onions and cook for 20 minutes until caramelised and reduced
Add the peas to a blender with a splash of hot water to make a rough puree
Remove some onions from the saucepan after 20minutes to use as a garnish
Add the peas, thyme and veg stock
Simmer with the lid off until reduced (about 10minutes) add salt and pepper to taste
Serve with crusty wholemeal and sourdough if you like!
