Green Bean and Tarragon Salad with Pine Nuts

Ingredients
  • 300g Green Beans
  • 5 Garlic cloves, unpeeled
  • 2 tsp dried Tarragon
  • 1 tsp Chilli flakes
  • 2 tbsp Extra virgin olive oil
  • 60g Pine nuts
  • 160g Lettuce
  • 160 Baby tomatoes, halved
Instructions

Preheat the oven to 180C

Add the green beans, oil, pine nuts, garlic cloves, herbs, chilli and seasoning to a tray and bake for 25 minutes

Add the tomatoes and lettuce at the end of cooking and serve
