Dukkah Roast Cauliflower and Pistachio

Shop this recipe:

  • 1 small Cauliflower, green leaves removed and chopped, florets broken into 2cm pieces
  • 1 Red onion, finely sliced
  • 4 tsp Dukkah spice mix (za’atar blend will also work)
  • 5 cloves Garlic
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Pomegranate molasses
  • 60 Pistachios

Preheat the oven to 180C

Add the cauliflower, greens, red onion, seasoning, olive oil and spice mix into a tray and bake for 30-35 minutes, turning halfway through

Remove and toss through the pistachios and drizzle with olive oil and molasses
