PIKT Box 4: Carrot Top Salad with Butter Beans, Apple and Sumac

Ingredients
  • 250g Baby tomatoes, halved
  • 1 Cucumber, roughly diced
  • Carrot top leaves (from about 10 carrots), finely chopped (can also use about 50g of parsley)
  • 1 can Butter beans, drained and rinsed
  • 1 Apple, finely diced
  • 2 tsp Za’atar 
  • 2 tsp Sumac
  • 1 tbsp Apple cider vinegar
  • 3 tbsp Extra virgin olive oil
  • Seasoning 
Instructions

Add the chopped carrot tops to a large salad bowl with 1 tbsp olive oil and apple cider vinegar

Prepare all the vegetables in the meantime

Add all the ingredients to the salad bowl and mix with seasoning

Serve immediately
