Carrot Top Salad with Butter Beans, Apple and Sumac

Ingredients
- 250g Baby tomatoes, halved
- 1 Cucumber, roughly diced
- Carrot top leaves (from about 10 carrots), finely chopped (can also use about 50g of parsley)
- 1 can Butter beans, drained and rinsed
- 1 Apple, finely diced
- 2 tsp Za’atar
- 2 tsp Sumac
- 1 tbsp Apple cider vinegar
- 3 tbsp Extra virgin olive oil
- Seasoning
Instructions
Add the chopped carrot tops to a large salad bowl with 1 tbsp olive oil and apple cider vinegar
Prepare all the vegetables in the meantime
Add all the ingredients to the salad bowl and mix with seasoning
Serve immediately
