Courgette Gazpacho

Shop this recipe:

  • 250g Baby tomatoes
  • 1 Red pepper, roughly chopped
  • 2 Celery stalks, roughly chopped
  • 1 Courgette, roughly chopped
  • Salt and pepper to taste
  • 1 Lemon, juice
  • 2 Cloves garlic, grated
  • 1 tbsp Apple cider vinegar
  • 2 tbsp Extra virgin olive oil
  • 100mls Water or  4 ice cubes

Cooks tip: Add tabasco for an extra kick. A bunch of Basil or parsley leaves would also be a good addition to the blend.

Storage: Can be refrigerated for 3 days


Put all the ingredients in a blender

Add water or ice cubes until desired consistency

Garnish with lemon juice, a drizzle of olive oil and celery leaves
