Sweet Red Onion, Pepper and Mushrooms on Toast

  • 1 small Red onion, sliced
  • 100g Brown mushrooms, sliced
  • 2 tablespoons Olive oil
  • 1 tablespoon Soy sauce (or free from alternative)
  • 1/2 teaspoon Chilli flakes
  • 2-3 pointed Peppers diced
  • 2-3 cloves roasted Garlic (or raw grated)
  • 2 teaspoons dried Oregano
  • Sourdough or whole grain bread to serve (or free from alternative)

Heat the oil in large saucepan on medium heat

Add the red onion and sauté  for 4-5 mins until coloured

Add the mushrooms, chilli, soy and garlic and cook another 4-5 mins until mushrooms are soft

Throw in the diced peppers and cook for a further minute and then take off the heat

Serve with toasted sourdough / wholegrain bread
