This super easy pickle recipe is so simple to make and completely hassle-free. This is great when entertaining or cooking for friends as it looks like you’ve really made an effort!
I love having this pickle with fish, tofu or chicken tacos – alternatively try it as a side dish when having veggie chilli, nachos or fajitas!
Another great idea I love is having the pickle as a snack with simply some vegan soft cheese, mashed chickpeas or avocado on toast or crackers.
You can really experiment with this recipe – adding in different flavours like fresh ginger, turmeric and chilli. Finish with some nuts or seeds and you’ve got yourself a well-balanced snack.
Shop this recipe:
- 75g Radishes, finely sliced
- 1 Small red onion, finely sliced
- 1 Clove garlic, minced
- 1 tsp Toasted coriander seeds (optional)
- 1 tsp Toasted fennel seeds (optional)
- 250ml Red wine vinegar
- Generous amount of salt and pepper
Simply combine all the ingredients in a bowl or jar and leave to sit for at least 15 minutes until the onion and radish have softened slightly, then serve.
