A delicious cheap 15 minute nutrient packed meal with 4 different veggies to deliver phytonutrients and fantastic flavour!
2 Nests of whole grain egg noodles
150g Frozen peas
2 tsp Chinese 5 spice
2 tbsp Sesame oil
10g Ginger, finely chopped
1 Clove garlic, finely chopped
2 Tbsp soy sauce
Heat the oil in a large wok or saucepan over medium heat
Add the ginger, garlic and stir for a few minutes then add the soy sauce and spices stirring for another 1 minute
Add the asparagus and baby corn, roughly chopped, stirring for 2 minutes then add the peas and mangetout
Meanwhile, boil the egg noodles for 5 minutes and add to the pan with the veggies
Finish the dish with toasted chopped almonds and lime
Add chilli if you like !
