About this recipe
Using antipasti bought from supermarkets is a fantastic way of adding beautiful flavour to a dish without much effort.
Try this incredibly easy one pan breakfast dish which is packed with fibre and nutrient rich ingredients.
50g Marinated artichokes, chopped
25g Olives (de-stoned)
2 Tbsp Olive oil
100g Cooked sweet potato, chopped into 3-4cm chunks
(simply boiled for 15 minutes and allowed to cool, I always keep some in my fridge)
Black pepper and salt to season
100g Sprouted lentils and beans
2 Eggs, whisked
50g Baby tomatoes
Add the artichokes, olives, cooked potatoes and lentils to a pan and saute for 3 minutes in olive oil
Move to one side of the pan, add olive oil and whisk in the eggs into one half
Finish with tomatoes and serve with sourdough if you wish
