Miso Quinoa with Cavolo Nero and Perfect Egg

About this recipe

This is a fantastic brunch recipe I usually make when I have a little more time on my hands at the weekend. The incredibly nutritious ingredients, eggs and quinoa, are packed with protein and quality fats to make this a delicious post workout favourite of mine. Easy to whip up and very heart healthy. We used to think cholesterol raises blood levels of cholesterol but we now know that not to be the case, however I doesn’t mean I indulge in as many eggs as I can. I vary my sources of fats from both plant and animal sources.

Shop this recipe:

  • 1 cup Quinoa (soaked for at least 20mins and thoroughly washed)
  • 1 1/2 cups boiling water
  • 1/2 Avocado
  • 30g Cavolo Nero finely shredded
  • 1 Egg
  • 1 tsp Miso Paste
  • 1 tbsp Extra Virgin olive oil

ADD quinoa to a saucepan on medium heat and dry toast for a minute before adding the oil and water and simmer gently for 13-15mins

PLACE the egg in boiling water for 6 minutes and then put straight into cold water to stop the cooking process

ADD the finely chopped greens to the quinoa during to last 2-3 minutes of cooking

MIX miso with 30mls hot water and add to the quinoa to flavour it

SERVE with chopped avocado and egg on top
