Another forgotten food that’s seasonal and packed with nutritional benefits. Sometimes referred to as string beans, they’re actually more a legume rather than a green vegetable and are delicious in this dish with the mushrooms and tomatoes and flavours from the fennel and basil too.

Shop this recipe:
- 2tbsp Olive Oil
- 200g Shiitake mushroom, thinly sliced
- 50g Almonds, roughly chopped
- 200g Green beans, roughly chopped
- 2 tsp Fennel seeds
- 200g Baby tomatoes, halves
- 25g Basil leaves, torn
Put the olive oil in a saucepan on medium to low heat
Add the almonds, shiitake mushrooms and saute for 3-4 minutes
Add the green beans and fennel seeds, cooking for another 3 minutes
Finish with the basil and tomatoes before serving
