Green Beans, Shiitake Mushroom and Almonds

About this recipe

Another forgotten food that’s seasonal and packed with nutritional benefits. Sometimes referred to as string beans, they’re actually more a legume rather than a green vegetable and are delicious in this dish with the mushrooms and tomatoes and flavours from the fennel and basil too.

Ingredients
  • 2tbsp Olive Oil 
  • 200g Shiitake mushroom, thinly sliced
  • 50g Almonds, roughly chopped
  • 200g Green beans, roughly chopped
  • 2 tsp Fennel seeds
  • 200g Baby tomatoes, halves
  • 25g Basil leaves, torn
Instructions

Put the olive oil in a saucepan on medium to low heat

Add the almonds, shiitake mushrooms and saute for 3-4 minutes

Add the green beans and fennel seeds, cooking for another 3 minutes

Finish with the basil and tomatoes before serving
