About this recipe

A fresh and easy miso soup beautifully flavoured and so quick to prepare I did it after my night shift. Packed with greens, vitamin enriched mushrooms and miso which is fantastic for gut health. There are so many variations on this recipe that you could make. Try using seaweed, we have so many types in the UK and it’s one of the most mineral rich ingredients available to us.

Ingredients
  • 2 tsp Miso Paste (organic)
  • 300mls water – 80 degrees C
  • handful Enoki Mushrooms roughly sliced
  • 1 tsp Wakame rehydrated
  • 25g Pak Choy finely sliced
  • 2-3 Spring Onions finely sliced
  • Roasted Seaweed snacks (optional)
Instructions

MIX the miso soup into a bowl of hot water until dissolved

ADD the mushrooms and Wakame seaweed to the bowl

ADD the pak choy and allow to wilt in the residual heat of the soup

GARNISH with seaweed snacks
