Flaxseed crusted chicken

About this recipe

A fantastic healthy version of fried chicken! The colonel hasn’t tasted anything like it. Packed with great flavours that pair with a delicious citrus salad, it’s super simple and much better than fried chicken that raises blood levels of cholesterol and products that promote inflammation of the vessels. Flax is definitely one of my favourite ingredients to experiment with and this is an unusual way of using it.


2x Chicken Breast (200g each)

3 tbsp Flaxseed Meal (also known as ground Linseed)

1 tsp cumin (ground)

1 tsp fennel (ground)

1 tsp paprika

½ tsp chilli dried

3 sprigs Thyme (leaves)

3 tbsp extra virgin olive oil 50g Alfalfa sprouts

50g Rocket Leaves

10cm Cucumber julienned

10g Pepitas

½ Lemon juice and zest


Preheat oven to 220C fan assisted

MIX the spices with the flaxseed

SMOTHER over the chicken with plenty of olive oil and add the spices

BAKE at 220C for 20-25mins (until golden brown)

MIX the salad ingredients in bowl and drizzle with olive oil
