Chilli Pea and apple spread on toasted sourdough or rye bread with olive oil

About this recipe

Apples are an incredible nutritious and humble ingredient that add a natural sweetness to your food. I tend to have this as a snack when I’m short on time. Combined with the peas and whole bread it is a complete protein meal with tons of flavour from the smoky spices.

Ingredients
  • 80g Frozen Peas
  • 150g Braeburn skin on apples, roughly diced
  • 1 tbsp extra virgin olive oil (plus extra to drizzle on the toast)
  • 1 tsp Paprika
  • ½ tsp dried chilli flakes
  • pinch of salt and pepper
  • Sliced Sourdough, Rye or Gluten Free Bread
Instructions
  1. Blend the ingredients together in a food processer or bullet blender
  2. You’ll be left with a rough textured spread
  3. Toast your bread
  4. Spread thick amounts over the slices and drizzle with extra virgin olive oil

Tip

Add a splash of water to the blender to loosen the mixture as needed
Try ground cumin and fennel seeds in addition to the spices
You could also use this as a thick dressing and toss through spinach or lightly steamed leafy greens
