Apple, Orange and Walnut Rice

Walnuts are a source of Omega 3 which is known to have anti-inflammatory properties and may be beneficial for heart health as well as preventing the incidence of dementia. It’s a quality fat source that we should enjoy. Try gently toasting them to bring out the oils and flavour

Shop this recipe:

  • 200g Brown Rice (can also use Red Rice or wild varieties, see packet for instructions)
  • 450mls boiling water
  • 1x Star Anise (can also use 2-3 cloves)
  • 2 tbsp Coconut Oil
  • Rind from a small orange – 2-3 strips
  • 100g Braeburn, skin on julienned
  • 2 Red Onions (150g)
  • 30g Walnut halves, lightly crushed
  • 1 tsp Chilli Flakes (optional)
  • Salt and Pepper
  1. Soak the Rice in Water for at least 20 mins
  2. Rinse well and add to a dry pan on medium heat to toast the grains dry for 1-2 mins
  3. Add 1 tbsp of coconut oil, star anise, seasoning and orange rinds
  4. Add 450mls boiling water and simmer for 20-25mins until the rice is cooked through
  5. Meanwhile, sweat the onions in 1 tbsp coconut oil for 10-15 mins
  6. Add the walnuts and chilli and stir for 2-3 mins
  7. Toss through the apple for half a minute and transfer to the cooked rice pan
  8. Fold through and serve
