Apple, Orange and Walnut Rice

Ingredients
- 200g Brown Rice (can also use Red Rice or wild varieties, see packet for instructions)
- 450mls boiling water
- 1x Star Anise (can also use 2-3 cloves)
- 2 tbsp Coconut Oil
- Rind from a small orange – 2-3 strips
- 100g Braeburn, skin on julienned
- 2 Red Onions (150g)
- 30g Walnut halves, lightly crushed
- 1 tsp Chilli Flakes (optional)
- Salt and Pepper
Instructions
- Soak the Rice in Water for at least 20 mins
- Rinse well and add to a dry pan on medium heat to toast the grains dry for 1-2 mins
- Add 1 tbsp of coconut oil, star anise, seasoning and orange rinds
- Add 450mls boiling water and simmer for 20-25mins until the rice is cooked through
- Meanwhile, sweat the onions in 1 tbsp coconut oil for 10-15 mins
- Add the walnuts and chilli and stir for 2-3 mins
- Toss through the apple for half a minute and transfer to the cooked rice pan
- Fold through and serve
