Apple and Spinach Slaw with Chipotle

About this recipe

I love using this dish as a side. The spinach is rich in folate plus phytochemicals that can improve inflammation. We are learning more about chronic low level inflammation and its relationship to health problems, so on balance a diet that is rich in colourful foods and ‘green’ is one of the healthiest habits to have. Try this unusual dish, you’ll make it time and time again.


200g Bramley Apples, Julienned

100g Spinach finely chopped

50g Red Cabbage, finely shredded

100g Mayonnaise (or plant based alternative)

2 tsp Chipotle pepper

½ tsp ground Cumin

15mls Apple Cider Vinegar

1 Lemon, juice and zest

Pinch of salt and pepper

  1. Mix all ingredients in a bowl


Serve with simple breaded chicken, marinated tofu or baked white fish
